It has been modified the original to suit my non-dairy, non-gluten needs. Ingredients:
- 1 3/4 cups of Quinoa Flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2 tablespoons coconut sugar
- 2 eggs or 2 tablespoons of flaxseed oil
- 1 1/2 cups warm almond or cashew milk
- 1/3 cup oil or non-dairy margarine melted
- 1 teaspoon vanilla extract
Instructions:

In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.

In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.

Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.
The Quinoa flour is going to deliver a nutty flavor to the waffles. If that is something that you don’t like, try gluten free flour, Rice flour, Almond flour instead.
